Carolea has very ancient origins. The Statti family has always played a leading role in the economy of Calabria in relationship with the history and tradition


Statti owns a 300 hectares of olive groves, most of which are hundreds of years old. They cultivate the indigenous Carolea cultivar that has very ancient origins and produces low-acidity oil with a brilliant yellow colour and fruity flavour with notes of almonds and delicate bitter, spicy notes.

Statti uses only mechanical and manual extraction methods to guarantee oil that maintains all the natural character and properties intact.

In the glass. From greenish yellow gold, it is clear to the eye. Its aroma has fruity green light of medium intensity and hints of almond and artichoke. Soft on the palate is balanced bitter and spicy notes, with initial sensation of sweet and smooth medium-high. In closing, the retro-olfactory sensation, almond tones.

The matches. Green salads and seafood, fried with carrots and bean sprouts; San Pietro fillets with green olives, orange and olive oil.
